Harvest 2011

2011 grape harvest :

- hand-made harvest on September 12 with hot and sunny wethear (28°C)

- 3 different pickings to obtain 3 different sortings and reach a better quality


 In the cellar :

2 sorting tables :

1 mistral to take off all withered berries and vegetal débris

1 conveyor with 4 persons who make a last sorting of each grape berry

- vinification/winemaking in small thermo-regulated stainless steel tanks (10hl) to separate the different qualities

- soft and slow extraction with punching of the cap, in order to obtain a structured but also soft wine

- running off on October 1 directly in new oak barrels
